“Mofongo” (mashed green plantain)

  • 1 green plantain
  • 2 garlic cloves
  • ½ teaspoon olive oil
  • 1 cup vegetable oil
  • Salt to taste


  • Cutting board
  • Chef’s knife
  • Spoon
  • Mortar
  • Small saucepan


  1. Peel plantain and cut into medium rounds. Fry at medium heat until they are thoroughly cooked, for approximately 10 minutes. Transfer to mortar where garlic has been already mashed with a pinch of salt and half of the olive oil. Mash plantain, adding remaining oil as needed.
